The aging process enhances its exceptional flavor, making this cheese unlike any other. The aroma is also intensified by the aging time, resulting in a very mature cheese with a perfect hint of rosemary.

Its texture is compact and golden, and at its ideal curing point , it is between six and eight months.

Not too dry, not too creamy.
